Description/Taste
Goldmine zucchini is a prolific vining plant that produces fruits spring through summer. They are a long and slim variety of squash, named for its golden yellow outer skin. The outer surface is shiny and smooth with an overall yellow color and thin white stripes. Its inner flesh is creamy and white with a firm texture. It has a vegetal nutty flavor that sweetens when cooked.

Goldmine zucchini is of the species botanically classified as Cucurbita pepo, along with other squashes, gourds and pumpkins. There are essentially three types of squash: constricted neck, zucchini and winter. Goldmine is a hybrid of the summer variety and constricted neck type squash. Goldmine squash blossoms are also desirable for use in salads or for stuffing. This Goldmine zucchini comes from Suzie's Farm, just south of San Diego, CA.
