Description/Taste
Tiny and tender, bright, Green baby French beans are smaller than common green beans. With a soft, velvety skin, they are quite meaty for their size, and their crisp texture offers a sweet, green flavor. The French bean retains the string from its original form. Strings have been bred out of most other green bean varieties.
Seasons/Availability
The Baby Green French beans are available from McGrath Farms throughout the summer with some slight gaping.
Nutritional Value
Containing about 30 calories per cup, French Beans offer an excellent source of vitamin A, vitamin C and folate.
Applications
Young pods may be prepared whole, eaten raw, or lightly steamed or sauteed. Cook chopped leeks in olive oil, add green beans and saute until cooked through, then finish with chopped dill and serve as a side dish. Saute beans in butter with chopped bacon, then serve warm finished with toasted pine nuts. Toss green beans with garlic and olive oil, then roast and serve with lemon juice and grated parmesan. Steam beans the toss with vinaigrette and fresh cherry tomato halves. French green beans will keep refrigerated for up to two weeks.
