Description/Taste
Micro cilantro is a petite herb measuring approximately 5 to 7 centimeters in length, featuring 2 to 4 flat, broad leaves connected to slender, light-green stems. The first leaves to emerge, known as cotyledons, are bright green with an elongated, blade-like shape. The subsequent true leaves have a slightly toothed edge and resemble miniature versions of mature cilantro leaves. All leaves possess a smooth, matte surface, while the stems exhibit a slightly waxy texture. Micro cilantro is crisp, with a sweet, bright citrus aroma and a clean, bold cilantro flavor that finishes with robust notes of pepper and fresh-cut grass. Unlike mature cilantro, it notably lacks the soapy scent some associate with the herb.

Micro cilantro is botanically classified as Coriandrum sativum and belongs to the Apiaceae which also includes cumin, dill, fennel, parsley, anise, and celery. This family is known for producing a plethora of herbs and spices that bode well for creating essential oils. Micro cilantro is a young, tiny, and edible version of the cilantro herb. It’s harvested approximately 14 to 21 days after sowing and is suited for both indoor and outdoor cultivation. Micro Cilantro is one of the most popular microgreens currently on the market today. This variety is favored for its peppery and pungent flavor. Micro Cilantro has become widespread as a garnish for its ease of use and ability to add flavor, texture, and visual appeal to any dish.

Micro cilantro contains vitamins A, C, and E, which act as antioxidants promoting healthy skin, boosting immunity, and protecting cells from damage. Vitamin K supports bone health and proper blood clotting, while B vitamins aid in energy production and brain function. Its high levels of calcium, magnesium, and phosphorus contribute to strong bones and teeth, while iron supports oxygen transport and reduces fatigue. Potassium helps maintain heart health and fluid balance, and zinc plays a key role in immune response and wound healing. Micro cilantro's carotene content is a precursor to vitamin A that enhances vision and supports skin health.
Applications
Micro cilantro is best suited for serving as a garnish and using in raw preparations as it will wilt if exposed to prolonged heat. It features a bright, sweet, and spicy flavor without the soapy, bitter characteristic that mature cilantro can develop. Micro cilantro is most commonly used in Mexican, Indian, Thai, and Chinese cuisines. It can be sprinkled on top of egg rolls and spring rolls, used to add a bright flavor to lobster and crab, mixed into polenta, or chopped into salsa. Micro cilantro pairs well with avocados, carrots, zucchini, tomatoes, coconut milk, citrus, ginger, mint, lemongrass, chile peppers, yogurt, chicken, lamb, and white fish. It will keep for 5 to 7 days when stored unwashed in a sealed container in the refrigerator. This microgreen should be added only at the very final stage of finishing a dish.
Ethnic/Cultural Info
The concept of microgreens originated in the 1990s through a collaboration between Chef Craig Hartman and hydroponic farmer Mike. While running an upscale restaurant at the Clifton Inn in Charlottesville, North Carolina, Hartman requested baby greens for his dishes. Unfamiliar with the term, Mike experimented and produced greens that were far smaller than intended. These tiny greens became a unique and integral element of Hartman’s cuisine. The term "microgreens" soon spread across the culinary world, inspiring the development of even smaller varieties such as nanogreens and picogreens.
Geography/History
Micro cilantro is a descendant of the cilantro species native to Southern Europe. This miniature variety thrives in moderate climates with full sun and is grown under controlled conditions in home gardens and commercial farms. Microgreens, including cilantro, gained popularity in the United States during the 1990s, with chefs incorporating them into upscale restaurant dishes. Today, Micro cilantro remains a favorite among chefs and home cooks alike, found at specialty grocers and farmers’ markets throughout North America. It is also available as seeds for home gardeners looking to cultivate their own supply.
