California peaches are wrapped in a lovely red tender skin that encases a creamy white flesh that is absolutely the sweetest. Round in shape and a blend of red, white and pink hues, this unique freestone peach contains less acid than regular peaches making every bite deliciously sweet and juicy.

Popular with chefs, tree ripened white-fleshed peaches differ from yellow-fleshed varieties due to their acid levels. Yellow-fleshed peaches are high in acid which competes with the fruit's sugar and gives them somewhat of a tangy taste. Deliciously sweeter, white-fleshed peaches contain little or no acid resulting in a sweeter bite.

Peaches are a good source of vitamin C and dietary fiber. Cholesterol-free and low in fat and sodium, one peach has about 37 calories.
Applications
Perfect for eating out of hand, peaches are a natural topping for ice cream and sorbet. Blend in vanilla or plain yogurt. Chefs like to use this tasty peach in fruit salads and for serving on refreshing fruit plates and platters. Make peachy preserves or jam. Smother slices in cream. Pair with seafood and poultry entrees to showcase their savory side. Add to rice salad. Hot and cold cereals love the succulent peach's tasty company. For an easy cobbler, sweeten twelve white peaches with a mixture of one cup water and one cup white sugar or to taste; spread peaches evenly in nine by thirteen-inch baking pan; sprinkle with one-half teaspoon cinnamon and a yellow or white cake mix. Cube an eight ounce package of cream cheese; top cake with cream cheese and pats of butter. Bake at 350 degrees forty-five minutes or until golden. Serve with whipped topping, a scoop of vanilla ice cream or frozen yogurt. To store, ripen at room temperature. Refrigerate ripe fruit up to three days.

Geography/History
Originally imported from Asia, white flesh peaches are an unusually sweet variety developed from an American favorite with little or no acid. There are thousands of peach cultivars and far exceed the cultivation of apples or pears. One reason is that peaches are bred easily, unlike apple and pear cultivars which are primarily the result of chance selection and not breeding. White-fleshed peaches were known in Europe as early as 1655 but their delicate nature compared to yellow peaches caused their popularity to decline. Since the 1980's white peaches have made a welcomed comeback. Later-ripening varieties have successfully been developed to extend this peach's season. In the United States, peaches are classified by shape, flesh color and how firmly the flesh attaches to the pit or stone. California is a major supplier.
