Description/Taste
Baby Chioggia beets are entirely edible: roots, stems and leaves. The swollen bulbous root is topped with variegated mid ribs and broad wavy green leaves that have a naturally salty flavor and earthy undertones. The flesh of the root is distinguished by its concentric rings of translucent white and deep pink or gold. Though sweet and tender, especially when harvested young, Chioggia beets inherently contain the highest content of geosmin, an organic compound responsible for their deep earthy flavor and aroma. Cooked Chioggia beets will not retain their brilliant coloring, but rather fade to paler versions of their original colors.

The baby beet mix from Weiser Family Farms consists of red and golden Chioggia beets. They are harvested when they are small and sweet no bigger than the size of a golf ball. The Chioggia beet is a variety of Beta vulgaris and member of the Chenopodiaceae family. It is also known as the Candy Stripe and Bull's Eye beet.
