Description/Taste
Collard greens have large, dark green, oval shaped leaves with noticable light green veins that run throughout. The flavor is slightly bitter with a nutty richness that develops with cooking. They are very popular in Southern cooking and best when sauteed or braised especially with smoked meats.
Seasons/Availability
Collard greens may be found year-round, but are best in the cooler months from fall to spring.

Collard greens are a member of the Brassicaceae family and are botanically known as Brassica oleracea, variety acephala. Collard greens have a long and storied history making their stamp on United States' culture by becoming the official vegetable of the state of South Carolina in 2011.
