Description/Taste
Kalamata olive is a large variety black olive. They have a smooth skin and oblong in shape. When young Kalamata olives are green and will turn a deep purple color when riped. Kalamata olives are meaty in texture and have a bitterness when eaten fresh. They are often cured with a red wine vinegar brine giving them a wine-like flavor.

Kalamata olives, botanically known as Olea europaea, are grown in the southern Peloponnese, Greece in the small town of Kalamata where it receives its name. Kalamata olives are protected by European Union law and can only be grown in the Peloponnese.
