Description/Taste
These immature onions have long, hollow green stalks and are entirely edible. Green onions differ from scallions as they have a tiny bulb. True scallions are actually even younger and have no bulb at all. The flavor is mild but can be used in countless dishes.

Nutritional Value
Onions are low in calories and high in energy. Containing valuable chemicals touted as disease-fighters, research shows that eating half an onion a day increases the "good kind" of cholesterol, increases circulation, prevents blood clots and lowers blood pressure. Onions offer an excellent source of vitamin A and vitamin C, plus potassium, magnesium, calcium and fiber. Eating five daily servings of fruits and vegetables lowers the chances of cancer. A recent study found eating nine or ten daily servings of fruits and vegetables, combined with three servings of low-fat dairy products, effectively lowered blood pressure.
