Description/Taste
Medium White Button mushrooms are medium to large in size with caps averaging 3-4 centimeters in diameter and are attached to short, stout stems. The caps are firm, smooth, and spongy, ranging in color from white, ivory, to cream-colored with hints of brown blushing. Underneath the cap, there are dark brown gills that produce brown spores, but these gills are hidden by a thin, cotton-like veil that connects down to the white, thick stem. When cooked, Medium White Button mushrooms have a slightly earthier and stronger flavor than the smaller white button mushroom but are still generally mild with a tender texture.

Medium White Button mushrooms, botanically classified as Agaricus bisporus, are the same as the common white button mushroom, just in a slightly larger size and are members of the Agaricaceae family. There are many different marketing classifications for white button mushrooms with the smallest being the size of a button, hence its name button mushroom, the medium-sized fungus being slightly larger, and then the silver dollar mushroom being around the size of a head of garlic or silver dollar. Each of these sizes is marketed for different culinary purposes, but they can also be used interchangeably in many applications. The smaller white button mushrooms are used by chefs whole, the medium size is most often sliced or chopped, and the larger dollar size can be stuffed, chopped, baked, grilled or roasted.

Medium White Button mushrooms contain some antioxidants, potassium, selenium, amino acids, vitamin D, riboflavin, phosphorus, zinc, folate, and manganese.
Applications
Medium White Button mushrooms are best suited for cooked applications such as sautéing, baking, and roasting. Their size is ideal for stir-fries, pizza, pasta, and rice dishes. They can also be mixed into light sauces for accompanying grilled or roasted meats or chopped and combined with herbs, rice, and cheese to be used as a stuffing for peppers or tomatoes. Medium White Button mushrooms pair well with spinach, gorgonzola, mozzarella, parmesan, pecorino romano cheese, tomatoes, carrots, celery, potatoes, garlic, shallots, onion, ginger, fennel, sage, parsley, basil, meats such as beef, pork, or poultry, eggs, seafood, balsamic vinegar, white and red wine, rice, pasta, and orzo. They will keep up to a week when stored loosely in a paper bag or stored in a bowl covered with moist paper towels to prolong freshness in the refrigerator.

Geography/History
White button mushrooms have been growing since ancient times and were first believed to have been cultivated in France by French botanist Joseph Pitton de Tournefort in 1707. Cultivation spread and white button mushrooms were then produced in the United States at the turn of the 20th century in Pennsylvania. Today Medium White Button mushrooms are primarily cultivated and are widely available at supermarkets, farmers markets, and specialty grocers in North America, South America, Europe, Asia, Africa, and Australia.
