Description/Taste
Arugula is a vibrant green leaf, often with a long, pale green stem. Arugula can be harvested in many stages along the growth curve starting when the leaves are young and mild in flavor until they are fully mature, about three of four inches in length. This green offers an herbaceous, spicy, peppery flavor with tasting notes of mustard. If the leaves are allowed to mature too long on the plant, the leaves will become bitter in taste and tough in texture.
