Bermuda onions are a sweet variety of Allium cepa and a member of the Lily family. They are valued for their low sulfur content and mild flavor. As their name suggests, the Bermuda onion gained its popularity from the island of the same name, but the seeds were originally brought over from the Canary Islands before 1888. Varieties include Yellow Bermuda, White Bermuda and Crystal Wax.
