Description/Taste
Obviously named for its oak leaf-shaped leaves, this attractive autumn-colored lettuce offers tender and very tasty leaves.
Nutritional Value
Low in calories, one cup of shredded lettuce contains about 10 calories, plus provides vitamin A, vitamin C, folate and some iron.
Applications
Red Oak lettuce's exceptional good looks beautifully dresses up fresh green salads. Use as a decorative edible bed for turkey, chicken or tuna salad. Tuck in pita bread and sandwiches. Top leaves with rémoulade sauce and sautéed scallops. For an attractive dessert, place peach slices on leaves; sprinkle with extra virgin olive oil and drizzle with honey. To stuff, blanch leaves in boiling water four minutes; refresh in ice water; blot leaves dry. Stuff with mushroom duxelles and braise gently in broth. Serve as a delicious accompaniment for roasted meat. To store, wrap in plastic; refrigerate. Rinse just before using.
