Escolar is classified as a snake mackerel and is part of the Gemplidae family. Escolar is a controversial fish because it is known to cause gastrointestinal problems when more than 4oz are consumed. This fish is caught right off the coast of Southern California. It has an extremely rich and buttery flavor due to the fish’s inability to metabolize wax esters in its diet. Escolar has many common names including the “white tuna, butterfish, oilfish, waloo and super white tuna saku.” Escolar can be grilled, sautéed, baked or broiled.
