Description/Taste
Petite® Broccolo Spigarello™ is comprised of broad and flat leaves connected to slender, pale green stems. The leaves have a roughly oval shape with lightly toothed or serrated edges. The leaves are also bright green, smooth, and pliable, displaying prominent veining across the surface. Petite® Broccolo Spigarello™ has a crisp, succulent, slightly firm, but tender consistency combined with a subtle crunch from the narrow stems. The greens offer a grassy, earthy, and vegetal flavor with mild, sweet, and peppery radish-like nuances reminiscent of the taste of broccoli sprouts mixed with kale.

Petite® Broccolo Spigarello™ is a part of a specialty line of boutique edible greens grown by Fresh Origins Farm in San Diego, California. Petite® Greens are more mature versions of microgreens, harvested approximately 4 to 6 weeks after sowing, and Fresh Origins currently grows over 125 varieties in-house. Petite® Broccolo Spigarello™ is a trademarked creation developed for chefs to reimagine the way spigarello is used in culinary dishes. Spigarello is an heirloom, dark leafy green belonging to the Brassicaceae family and is highly favored for its sweet, broccoli-like flavor and non-bitter nature. Chef’s value spigarello for its rarity as a culinary ingredient in the United States, and the Petite® Green version captures the essence of mature spigarello in a tender, compact, edible form. Petite® Broccolo Spigarello™ adds color, flavor, and texture to culinary preparations and is used as a modern edible garnish to enhance the dining experience.
Nutritional Value
Petite® Broccolo Spigarello™ has not been studied for its nutritional properties. Like mature spigarello, the greens are an excellent source of vitamin C to strengthen the immune system, vitamin A to maintain healthy organ functioning, and vitamin E to protect the cells against free radical damage. The Petite® Greens also provide some vitamin K to assist in faster wound healing, folate to produce red blood cells, potassium to balance fluid levels within the body, and other amounts of calcium and manganese.
Applications
Petite® Broccolo Spigarello™ is commonly incorporated fresh as an edible garnish or green into both raw and cooked preparations. The Petite® Green can be lightly torn and tossed into salads, sprinkled over pasta, floated over soups, or used to garnish casseroles, legumes, or grain bowls. Petite® Broccolo Spigarello™ can also be used to enhance spring mixes, layered as a bed of greens under appetizer or vegetable platters, mixed into vegetable sautees, topped over roasted bells pepper or eggplant, blended into sauces such as pesto, or stuffed into roasted meats. The tender greens are versatile with their mild flavor and can be scattered across pizzas as a vegetal bite, tossed with vinaigrettes or oils to create a savory side dish, or used as a simple garnish to any savory main dish. Petite® Broccolo Spigarello™ pairs well with wild mushrooms, legumes, tomatoes, peppers, winter squash, potatoes, aromatics such as shallots, garlic, and onions, and meats such as poultry, pork, beef, and lamb. Petite® Greens will generally keep up to seven days when stored unwashed, dry, and in a container in the refrigerator. It is recommended to use Petite® Broccolo Spigarello™ immediately for the best quality and flavor.
Ethnic/Cultural Info
Spigarello is closely associated with Southern Italy, specifically Napoli and Puglia, where it has been growing for centuries. The leafy green is known as Spigariello, Cima di Rapa, Broccoli Spigarello, and Cavolo Broccolo A Getti di Napoli, and in Italy, spigarello was a common ingredient in cucina povera, a classification given to peasant or poor man’s foods. This cooking style utilizes in-season ingredients and is centered around the philosophy of using what is available by combining many different elements and flavors to create a unique dish. In the modern-day, it has become a rustic form of cooking using simple, fresh ingredients. Chefs also incorporate unique garnishes, including Petite® Broccolo Spigarello™, to elevate their traditional cucina povera dishes and create a contemporary feel. Petite® Broccolo Spigarello™ can be used as a garnish over stuffed eggplant, pasta, or even Panzanella. It can also be used as a garnish over minestra, a traditional soup cooked with dark greens such as kale, spigarello, or chard and mixed with spices and beans. Petite® Broccolo Spigarello™ would provide additional depth of flavor, complementing the mature spigarello, and would enhance the dishes’ overall visual appeal.
