Cannelini shelling beans are also known as white kidney beans. More commonly found in dried form, the flavor of this popular bean is light and clean, with a smooth wonderfully creamy texture.

Applications
Fresh cannelini beans are a chef's dream. They are still so moist that they can be cooked in minutes, without the need to soak overnight. Briefly boiled slowly with some sea salt and a bay leaf and strained, they make for a delicious simple salad. Add fresh basil, tomato, cracked pepper and drizzle with hazelnut or olive oil and the beans will speak for themselves. Lush, plump and creamy - no need to manipulate or cook down into a soup or stew.
Geography/History
Although it is an adopted family member of the vegetables of Italy, the cannelini bean's heirloom origins can be found in the New World of South America: Argentina.
