Description/Taste
Micro Cajun Mix™ is comprised of a blend of small microgreens that range in shape from flat, elongated, and oval, cordate and curved, to serrated, frilly, and deeply lobed. The leaves are smooth, pliable, and delicate, varying in color from dark green, bright green, purple-green, to a deep red, burgundy hue. The microgreens also have a soft, crisp, succulent, and tender consistency. Within the mix, each microgreen has a distinct flavor, including notes of oregano, thyme, okra, celery, basil, and others, but in combination, the mix provides a zesty blend of earthy, pungent, peppery, and vegetal flavors with a clean, herbal finish.

Micro Cajun Mix™ is a blend of young, edible seedlings that are a part of a trademarked line of specialty microgreens grown by Fresh Origins Farm in San Diego, California. The crisp, flavorful greens are an innovative, proprietary creation developed for chefs to reimagine the way Cajun flavors are traditionally used in culinary dishes. Micro Cajun Mix™ incorporates microgreens with earthy, peppery, and vegetal flavors to develop a dynamic combination that can be easily added as an edible garnish to any dish. The microgreens can be placed individually on small plates as a procured decoration, or a handful of the greens can be quickly sprinkled across larger preparations for added flavor and textural layers. Fresh Origins produces over 115 microgreens with unique flavors, and the tiny greens are available year-round for chefs to express their creativity through fresh, natural, and edible greens.
Nutritional Value
Micro Cajun Mix™ provides several vitamins and minerals due to its mixture of herbs with unique nutritional properties. The greens are a source of vitamins A and C to strengthen the immune system and reduce inflammation, calcium to protect bones and teeth, and magnesium to maintain optimal nerve functioning. The microgreens also contain some vitamin K for faster wound healing and lower amounts of copper and iron. It is important to note that the vitamins and minerals are found primarily within the leaves and not in the stems of the microgreens. Growing conditions also significantly impact the nutritional content, and Fresh Origins cultivates their microgreens in a natural setting, an ideal climate for healthy, optimal greens.
Applications
Micro Cajun Mix™ is best used fresh as an edible garnish to showcase the mix’s diverse flavors and delicate, vegetal crunch. The microgreens provide increased textural and visual appeal and are traditionally added at the end of cooking as a finishing element to prevent the leaves from wilting. Micro Cajun Mix™ can be sprinkled fresh over soups, stews, chilis, and gumbos, mixed into a bed of greens for seafood, or utilized as an edible garnish over roasted meats, seafood, and vegetable side dishes. The mix contains flavors that complement many traditional Cajun dishes, including ettoufette, a shellfish and rice dish, jambalaya, casseroles, po’boys, and rice and bean-based dishes. Micro Cajun Mix™ can also be placed on top of deviled eggs as an appetizer, layered into sandwiches, or sprinkled over spicy pasta and dips. In addition to Cajun dishes, Micro Cajun Mix™ can be incorporated into Latin and Mexican dishes, including tamales, enchiladas, tacos, soups, or piled over guacamole. Micro Cajun Mix™ pairs well with seafood such as crawfish, white fish, crab, and shrimp, meats including pork, poultry, sausage, and beef, bell pepper, celery, okra, tomatoes, garlic, legumes, and corn. Whole, unwashed microgreens will generally keep 5 to 7 days when stored in the refrigerator in a sealed container.
Ethnic/Cultural Info
The word “Cajun” was developed from “Acadian,” a descriptor used for a region in Northeastern North America, encompassing the Canadian provinces of Prince Edward Island, New Brunswick, and Nova Scotia. Acadia was settled by French immigrants in the 17th century, and many of the settlers were from the French countryside, bringing a rich culinary history of one-pot meals comprised of local ingredients. After the Acadians were settled into their new homes, in 1755, political turmoil caused approximately 14,000 Acadians to be exiled when they refused to pledge allegiance to the British Crown. The Acadians fled to the south and settled in the swamp and bayou-filled coastal regions of Louisiana. Over time, the Acadian’s cuisine adapted to locally sourced ingredients from the coastal areas, bayous, and swamps, and the recipes began mixing with other cultures also found in Louisiana, including Italian, Creole, Native American, German, and Spanish influences. This unique blend of culture and tradition developed the Cajun cuisine that is popular in the modern-day. Cajun cuisine is known for its complex flavoring through hearty meats, vegetables, and earthy, pungent, and warm spices. Micro Cajun Mix™ can be used to elevate familiar Cajun dishes and adds a fresh pop of flavor to heavier meals.
