Micro Carrot Fern Leaf™ is a modern-day garnish favored by chefs for its delicate aesthetic and frilly, lightweight appearance. The slender microgreens are a twist on classic carrot foliage, which was historically a choice fashion statement for London residents. Carrots were widely grown in home gardens throughout London during the Elizabethan period in 1533, and the roots were also sown in commercial market gardens as an everyday vegetable. Both the roots and the carrot tops were considered commercially relevant crops. After the Elizabethan period, the city of London lived under the reign of King James the 1st, and carrot tops transformed from an edible ingredient to a choice fashion statement. Fruits, leaves, feathers, and flowers all became staples in decorative fashion. The frilly carrot greens resembled bird feathers, and many ladies of the English court would fasten the greens to their hats, onto their clothing, or pin the leaves into their hair. The leaves were favored as a visually unique alternative to feathers and were believed to contribute an air of natural elegance. Carrot tops were also sometimes left with a small piece of the root attached to allow for resprouting in English homes. John Parkinson, a well-known English botanist and herbalist to King James the 1st, recorded the use of greens in women’s fashion. He also noted that carrot tops with shades of red were the most desirable as they were seasonal and more challenging to obtain than solid green tops.
