Description/Taste
Micro Fines Herbes Mix™ consists of very small leaves connected to slender stems, and the leaves range in shape from flat, elongated, and oval to slightly curled, frilly, and deeply lobed. The leaves also vary in color from dark green to a deep red, burgundy hue. Micro Fines Herbes Mix™ has a soft, crisp, succulent, and tender consistency. Within the mix, each microgreen has a distinct flavor, including anise, onion, and herbaceous notes, but in combination, the mix provides a delicate blend of sweet and subtly savory flavors with a bright and clean, herbal finish.
Seasons/Availability
Micro Fines Herbes Mix™ is available year-round.
Current Facts
Micro Fines Herbes Mix™ is a blend of young, edible seedlings that are a part of a trademarked line of specialty microgreens grown by Fresh Origins Farm in San Diego, California. The herbaceous microgreen blend is a modern twist on the famous French fines herbes, a classic combination of parsley, chervil, chives, and tarragon. Micro Fines Herbes Mix™ incorporates the traditional herbs in microgreen form and includes new flavors through additional microgreens to add depth and versatility to culinary applications. Micro Fines Herbes Mix™ is generally harvested 1 to 2 weeks after sowing, and chefs use the greens as an accent in savory dishes. Micro Fines Herbes Mix™ is not limited to French-style recipes and can be incorporated into all types of global cuisine. The microgreens provide a delicate blend of flavors, and the mix is an easy-to-use, sophisticated addition, creating distinct textures and colors.
Nutritional Value
Micro Fines Herbes Mix™ offers a blend of vitamins and minerals due to its mixture of herbs with unique nutritional properties. The greens are a good source of fiber, which helps regulate the digestive tract and also contain minerals, including magnesium, potassium, calcium, and iron. The microgreens also provide some vitamins, such as vitamins A and C, which are antioxidants that can help strengthen the immune system and reduce inflammation within the body. It is important to note that the vitamins and minerals are found primarily within the leaves and not in the stems of the microgreens. Growing conditions also significantly impact the nutritional content, and Fresh Origins cultivates their microgreens in a natural setting, an ideal climate for healthy, optimal greens.
Applications
Micro Fines Herbes Mix™ is best used fresh as an edible garnish or subtle flavoring. The delicate greens cannot withstand high heat and should be added at the end of the cooking process to prevent the leaves from wilting and losing flavor. Micro Fines Herbes Mix™ also has a subtle taste that complements lighter flavored dishes and can be used in place of the mature herbs in any recipe calling for fines herbes. The microgreens can be sprinkled on top of salads for added flavor, incorporated into rich, creamy sauces, mixed into compound butter, and used to enhance vinaigrettes, green goddess dressings, and flavored oils for fresh vegetable dishes. Micro Fines Herbes Mix™ can also be layered on top of soups, roasted meats, and pasta, or they can be strategically placed on seafood dishes to add color, flavor, and texture. In addition to traditional recipes that call for fines herbes, Micro Fines Herbes Mix™ can be incorporated into fusion dishes such as fried rice or simply added to a cream cheese bagel to increase the depth of flavor. The tiny greens also provide a striking visual when served with Fresh Origins Little Veggies™. Micro Fines Herbes Mix™ pairs well with mushrooms, carrots, fava beans, peas, corn, turnips, beets, tomatoes, meats such as rabbit, poultry, veal, and fish, crustaceans, rice, fennel, and almonds. Micro Fines Herbes Mix™ will generally keep 5 to 7 days when stored in the refrigerator in a sealed container.
Ethnic/Cultural Info
Fresh Origins Farm has created over thirty unique microgreen mixes to provide chefs with elevated, procured flavor combinations. Specialized mixes, including Micro Fines Herbes Mix™, are blending classic herbs in modern flavor combinations to allow chefs to create new dishes with exceptional flavors and textures. Fines herbes is one of three famous French herb mixes, best used fresh rather than dried, and is considered to be the most delicate blend, most famously used in the French omelet. Despite the herb mix’s popularity in French cooking, it was historically difficult to source all of the herbs year-round, especially fresh chervil. To meet the market demand for fresh herbs, Fresh Origins uses the mild, Southern California climate to produce robust, healthy, and flavorful microgreen versions of the herbs for chefs year-round. The delicate greens can be added at the end of the cooking process, providing subtle clean flavors, and the herbs require no extensive preparation other than artfully plating.
Geography/History
Fines herbes have been used in French cooking for centuries, but the first recorded description of the herb mix was mentioned in the early 20th century in the writings of Chef Auguste Escoffier. Micro Fines Herbes Mix™ is a modern version of the classic blend and was developed at Fresh Origins Farm in San Diego, California, the leading American producer of naturally grown microgreens since the mid-1990s. Fresh Origins has been naturally growing microgreens for over twenty years, and the farm closely partners with chefs to create innovative varieties with unique flavorings. Fresh Origins also has the highest level third-party-audited food safety program and is a certified member of the California Leafy Greens Marketing Agreement, which follows science-based food safety practices to promote transparency and honesty in production. Today Micro Fines Herbes Mix™ can be found through select distribution partners of Fresh Origins across the United States, including Specialty Produce, and are also found through partners in Canada.
