Description/Taste
Lecano kale, also known as Toscano kale has deep dark green leaves that are super-savoyed, long and narrow with a striking blue-grey color. It is one of the most robust and vigorous growers in the kale family.
Seasons/Availability
Lecano kale, also known as Toscano kale and Black Italian cabbage, is available from Rutiz Farms year-round.
Nutritional Value
An excellent source of vitamin C, nutritious-plus kale provides iron, vitamin A, calcium, magnesium, potassium, protein, carbohydrates and dietary fiber.
Applications
Kale loves to be in the company of garlic, pork ginger and rich oils. Long simmering brings out an amazing dimension in its flavor profile. The kale collapses in the pan and then swells as it cooks. This method will create a nourishing sweet "pot liquor" that will yield the need for bread to sop up its every juice. Their are many vitamins in that pot liquor to so make sure to use it all.
Geography/History
A cool weather annual, kale's cold-hardy personality makes its flavor even sweeter after a light frost.
