Bonewerks Demi Glace de Poulet is what would be referred to as a "half" glaze. This is because it has equal parts of brown sauce and brown stock which has been reduced by half the amount to make a general glace. Demi Glace de Poulet is made from roasted chicken bone that has been blended with mire poix. In addition to the carrots, onions, and celery fresh herbs and spices are added to the demi glace. Demi Glace de Poulet can be virtually added immediately to any dish because it only needs to be heated and plated. Demi Glace de Poulet can be used in poultry dishes, soups, or stews to enhance the overall flavor.
