Description/Taste
Bonewerks Demi Glace de Veau is made from oven roasted veal bones. The veal bones that are used are fed special feed and are great to use in a demi glaze because these bones are high in cartilage. The cartilage acts as a thickening agent giving the glaze a jelly-like consistency. The demi glaze is simmered, reduced and seasoned with fresh herbs and spices and is ready to immediately plate after being heated. This Demi Glaze de Veau pairs especially well with mushrooms, peppercorns and horseradish. Demi Glaze de Veau can also be used as a stand alone sauce.
