Offering dietary fiber, pineapple provide a source of vitamin C, plus some iron and calcium. Two slices, about three inches in diameter, contain about 60 calories.
Applications
A natural in most any combination, cubed pineapple dresses up grilled kabobs. Blend with bananas, mangoes, papaya, kiwifruit, and strawberries for a glorious tasting fruit salad. A hollowed-out shell makes an attractive festive bowl for seafood, chicken or fruit salads. To keep the "bowl" from rocking, cut a thin slice from the bottom. To store, ripe pineapple should be refrigerated but not too cold. Cover with plastic to prevent moisture loss. Use within a few days.
