Description/Taste
Dragon tongue shelling beans are encased in a yellow pod with distinct purple streaks and flecks. Each pod is around four to five inches in length, and is tender and edible. Offering sweetness and a juicy texture when enjoyed raw, dragon tongue beans are prized as an all-purpose bean. The versatile dragon tongue beans may be used as fresh snap beans when very young and as shelled beans when fully mature.

Current Facts
Shelling beans age in the pod as well as out. If you shake the pod and hear a rattle, the beans inside are dry. Fortunately they are still edible and just as easy to harvest.
