Description/Taste
Mizuna's jagged-edged green leaves grow in a bushy clump. This Asian specialty vegetable can mature into a deep, green head that measures up to 9 inches high and 18 inches across. Mizuna is most often marketed in separate leaves that have been harvested when young and tender. Young mizuna leaves measure 1 1/2 inches long and about 1 inch across. Reminiscent of peppery arugula, young mizuna offers a much sweeter, milder taste and a fresh earthy flavor. Mature mizuna stalks are quite juicy and offer their own special flavor. Delicately-fringed mizuna is often found in a mix of baby greens or mesclun. Raw or cooked, the slightly crunchy leaves have a nutty, peppery flavor. This green has been given the nickname "spider mustard".
Nutritional Value
Dark green leaves offer the most nutrition and provide beta carotene, vitamins, minerals, plus are a source of fiber. Low in calories, greens are a dieter's delight and salvation as they healthy eating without an abundance of calories. Eating five daily servings of fruits and vegetables lowers the chances of cancer. A recent study found that eating nine or ten daily servings of fruits and vegetables, combined with three servings of low-fat dairy products, were effective in lowering blood pressure.
Applications
Mix with other greens or enjoy alone. Steamed mizuna is delicious topped with a light sauce or melted butter. Toss in stir-fries the last minute of cooking. Great in soups. Quickly wilt mizuna leaves; add a touch of garlic and a dash of oil. Mature mizuna makes a perfect substitute for chard or kale.
