Description/Taste
Pepitas, otherwise known as pumpkin seeds in English, are the seeds from the pumpkin or other cultivated varieties of squash. Pepita seeds have an asymmetrical shape, are flat and have a light to olive green skin. They have a slightly sweet flavor, are somewhat chewy in texture and are easily malleable. The roasting process gives the seed a golden brown color and gives the seeds a sweet and salty taste.
Seasons/Availability
Dried Pepita seeds are available year-round. Fresh pumpkin seeds are available during the fall season.
Nutritional Value
Pepita seeds provide essential minerals such as iron, copper, magnesium, manganese, phosphorus and potassium. They are also found to reduce the risk of prostate cancer in men and can be used as an anti-inflammatory.
Applications
Roasted Pepita seeds are often served as a snack. These seeds can also be used in baked goods such as breads, muffins and more. Pepitas have about 50 calories per cup.
Geography/History
Pepitas date back as early as the ancient Aztec empire in Mexico. The oldest pumpkin seed found dates back as far as 7,000 B.C. which was excavated from a tomb in central Mexico. Pepitas were used in ancient times as food as well as an offering to the gods in ritual ceremonies. By the 18th century Pepitas made there way across Asia and Europe and are used in a variety of different ethnic cuisines.
