Description/Taste
Resembling the larger acorn squash, the thin skin of this new, smaller variety of acorn squash is lighter green and much softer. The pale, green-to-orange flesh offers a mild squash flavor.

Nutritional Value
All squashes provide vitamin A and vitamin C, some of the B vitamins and are a good source of fiber. About 100 calories are in one cup of cooked squash.
Applications
Entirely edible, baby green acorn squash have tender skin cooks quickly. Steam, sauté, braise, bake, roast, microwave or grill. Add to salads, casseroles and stir-fries. To store, refrigerate in a plastic bag up to one week.
Geography/History
Considered a type of winter squash, acorn squash is a member of the same family as summer squash which includes zucchini. Central America, Mexico and the United States are major producers of baby acorn squash, simply acorn squash picked at an early stage of growth.
