Description/Taste
Old cucumbers are large in size, roughly 15 to 20 centimeters long. The outer skin is yellow to golden-brown in color, and has a wrinkled, rough and leathery texture. The inner flesh is a pale white-green and is soft but toothsome, reminiscent of the young cucumber. Old cucumbers have a mild, slightly grassy flavor but may have some bitterness around the seeds and outer flesh. Each fruit contains numerous fibrous white seeds, which should be removed before consumption.

Old cucumbers are the mature fruit of a cucumber plant, botanically classified as Cucumis sativus. In China, the term for cucumbers is Hunag Gua, which translates to “yellow gourd”, which is based on the color of the cucumber in its matured state.

Applications
Old cucumbers are best suited for soups, and are most commonly used in the Cantonese-style soup called Lao Huang Gua Tang.
