Description/Taste
Bright yellow and resembling the larger variety, baby crookneck summer squash are curved at the neck with a thin, tender, often bumpy, skin. The creamy flesh offers a mild squash flavor. Usually about three inches long, they have a bulbous bottom and are the same variety as mature crookneck squash, simply picked at an earlier stage of growth.

High in natural fiber, squash provides a good source of vitamin A, vitamin C, niacin, thiamine, riboflavin and contain some calcium, potassium and iron.
Applications
Baby crookneck squash may be baked, microwaved, steamed, sautéed or fried, toss in stir-fries, soups, stews and casseroles to add color, flavor and texture. As they are delicate and small, these baby summer squash are ideal for halving or serving whole. To store, place in a plastic bag; refrigerate.
