Sprouting Red Cabbage
Inventory, lb : 0
Description/Taste
Sprouting red cabbage has loosely packed leaves in heads about the size of a golf ball. They resemble a cross between small romaine lettuce heads and Brussels sprouts. Their flavor is milder and sweeter than the main cabbage head. Use the sweet crispy leaves raw or lightly sautéed.
Seasons/Availability
The season for Sprouting cabbage can vary, but typically occurs 4-6 weeks after the spring and fall harvests of the main cabbage heads.
Current Facts
Cabbage is a cool season vegetable botanically classified as Brassica oleracea. After the main cabbage heads are harvested the roots and leaves are typically removed, but if left, a second crop of smaller cabbage heads will sprout. These small, Brussels sprout-like heads develop from buds located in the bases of the older leaves. Sprouting Cabbage is an underutilized culinary ingredient because it is rarely left to develop.
