Yellowtail Jack filets are caught right off the coast of San Diego near and around the Coronado Islands. The Yellowtail Jack is the largest member of the Jack family and it is why this species of fish are commonly referred to as “Jacks.” These fish thrive in tropical and sub-tropical waters and are often caught by using the hook-and-line technique. This Yellowtail offers a mild flavor, high moisture content and is off-white in color. Yellowtail Jack filets are a great choice for sushi making and is called Maguro in sushi restaurants. The Jack filets firm texture and minimal oil content makes it a versatile fish in the kitchen.
