Description/Taste
Tiny, tender and tasty, mini-turnips offer a slightly sweet delicate taste. Very young and very fresh with attached bright colored greens, this white-flesh turnip has a white skin.

Growing in a huge range of shapes and sizes, turnips can weigh as little as a few ounces or up to a whopping forty to fifty pounds. The flesh can be white or yellow, but most commercial turnips have white flesh. "Yellow turnips" are actually turnip cousins known as rutabagas.
Nutritional Value
Turnips are a good source of complex carbohydrates. The edible greens are rich in vitamins and minerals. Low in calories, one cup of cubed turnips contains about 33 calories.
Applications
Excellent braised, place mini-turnips in a heavy skillet. Add just enough broth to cover the bottom of the pan; cover and simmer just until tender. Season with butter and salt and pepper. Turnips may be microwaved, roasted, boiled, steamed, baked or enjoyed raw. Toss in stir-fries. Turnips love the compatible company of sweet potatoes, carrots, potatoes, onions, mushrooms and apples. Enhance flavor with garlic, paprika, thyme, chives and tarragon. Smother steamed mini-turnips in favorite cheese or drizzle with vinaigrette. Top with crumbled crisp bacon. Sweeten steamed turnips with apple cider and cinnamon. Cream mini-turnips to accompany meat entrees. Avoid cooking turnips in aluminum or iron pots as the flesh may turn dark. To store, remove greens and store separately up to four days. Place mini-turnips in plastic bag; refrigerate in crisper drawer and use within one week.
Geography/History
An age-old cruciferous vegetable in the cabbage family, Brassicaceae/Cruciferae, turnips are believed to have been cultivated by Ancient Greeks. Fossils of ancient turnips dating back thousands of years have even been discovered in caves in western China. Growing wild in northern Africa, Romans spread turnips north into Europe. Grown as a spring or fall crop across the United States, hardy turnips love cool weather and are resistant to frost and mild freezes.
