Sweetly pungent, opal basil is especially excellent for infusing vinegar and oil with its stunning color and mild flavor. Make a beautiful soft pink sorbet. Enhance tomato dishes, tomato sauce, pasta, pizza dough, soups, salads, vegetables and meats. Sweetly perfumed, add its charm to salads and ripe tomato slices. Make a pretty purple pesto. Sun-dried tomatoes pair well in a layered cheese torta or on pasta. Tomato-based dishes and cream sauces dearly love this herb. Partner with sun-loving vegetables, potatoes, bread, sandwiches, fish, eggplant, zucchini and pates. Enhance steamed green beans with coarsely chopped opal basil; sprinkle with Parmesan. Pair with edible flowers to make a colorful mixed green salad. To store, chefs say to treat fresh basil like a flower. Put stems in a pot or glass of water; use within three to six days. Refrigerating fresh basil causes this delicate herb to develop dark brown spots, which ruins its flavor and presentation.
