Coleman Family Farms is a multi-generational farm growing a variety of herbs, vegetables, and edible flowers in two locations: Ventura and Carpinteria, California. The Coleman family has been farming in Central California since 1963, using biodiverse and pesticide-free farming practices. Cardoons are flat, thick, and fibrous stalks with succulent, moist, soft flesh. Once cooked, Coleman Family Farm's Cardoons feature a nutty, sweet, and subtly bitter flavor reminiscent of the taste of artichokes.
