Description/Taste
Honeysuckle potatoes are small to medium in size and are cylindrical, oblong, and slightly lumpy in shape, averaging 5-7 centimeters in diameter. The smooth skin is light beige to gold with unique splotches of bright pink blush, light brown spots and patches, and shallow to medium eyes sprinkled across the surface. The flesh is firm, dense, and moist with a creamy yellow hue. When cooked, Honeysuckle potatoes are tender and soft with an earthy and buttery flavor.

It is also known as the Honeysuckle Gold Vales Sovereign and was created by RPE Inc. produce to meet market demand for new and unusual varieties.

Applications
Honeysuckle potatoes are best suited for cooked applications such as mashing, baking, and roasting. They can be sliced mandolin thin and used in potato au gratin, hash browns, or layered in a ratatouille. They can also be roasted with the skin on to showcase its unique coloring. Honeysuckle potatoes can be roasted and smashed for a crispy texture, or they can be baked and served as a side dish. Honeysuckle potatoes pair well with onions, rosemary, thyme, lemon, cauliflower, rutabaga, tomato, truffle, cooked eggs, caviar, beef, pork, shellfish, hard cheeses, cream, and horseradish. They will keep up to two weeks when stored in a cool, dry, and dark place.

In 2008, the vales sovereign variety that the Honeysuckle would later be created from was voted potato of the year in Great Britain for its superior flavor and versatility in cooked applications. Honeysuckle potatoes were created by RPE produce to meet the demand for new varieties with rich flavors and unique visual appeal.
Geography/History
The Honeysuckle potato was developed in 2015 as part of RPE Inc.’s commodity brand, Old Oak Farms. RPE Inc. is a grower and shipper located in Bancroft, Wisconsin. Honeysuckle potatoes were sold as a specialty and limited-edition variety and were available at select markets in the United States.
