Description/Taste
Micro Intensity Mix™ is comprised of very small leaves attached to slender stems, averaging 5 to 7 centimeters in length, and the leaves range in shape from oval, elongated, narrow, to broad and curved. The leaves also vary in color from bright green, purple, to crimson and are flat, displaying smooth, even edges or serrated edges with prominent surface veining. The thin stems are pale green to maroon and offer a crisp, succulent, and tender consistency with an earthy aroma. Micro Intensity Mix™ contains a blend of herbs and microgreens with vegetal, herbaceous, green notes combined with bright, citrus-forward, spicy, and savory-sweet, licorice nuances.
Seasons/Availability
Micro Intensity Mix™ is available year-round.
Current Facts
Micro Intensity Mix™ consists of young, edible seedlings that are a part of a trademarked line of specialty microgreens grown by Fresh Origins Farm in San Diego, California. The signature mix combines 15 to 20 different herbs and greens with varying flavors, colors, textures, and aromas. Micro Intensity Mix™ was specially curated by Fresh Origins to provide chefs with an edible garnish exhibiting heightened visual appeal and a robust, clean flavor. The mix is unique to Fresh Origins, and the microgreens are generally harvested 1 to 2 weeks after sowing, gathered at the peak of their growth cycle to ensure optimum flavor. Chefs use Micro Intensity Mix™ as an accent in savory dishes, and the robust flavors complement a wide variety of preparations. The popular mix also adds visual depth with its multi-colored, expressive appearance, and the greens elevate the dining experience by presenting clear flavor notes in small, controlled amounts.
Nutritional Value
Micro Intensity Mix™ is a source of vitamins A and C to reduce inflammation, boost collagen production, and strengthen the immune system. The microgreens also contain antioxidants to protect the body against free radical damage, vitamin K to promote faster wound healing, and provide some iron, phosphorus, potassium, and calcium. It is important to note that the vitamins and minerals are found primarily within the leaves and not in the stems of the microgreens. Growing conditions also significantly impact the nutritional content, and Fresh Origins cultivates their microgreens in a natural setting, an ideal climate for healthy, optimal greens.
Applications
Micro Intensity Mix™ is best used fresh as an edible garnish to enhance the flavor and visual appeal of savory dishes. The delicate greens cannot withstand high heat and should be added at the end of the cooking process to prevent the leaves from wilting. Micro Intensity Mix™ offers a dynamic and vibrant flavor combination that can be added to salads, sprinkled over surf and turf, used as a bed of greens for fish such as halibut or seabass, or topped over soups and cream-based chowders. The microgreen mix can also be mixed into pasta, floated over soups, layered in sandwiches, or stuffed in gyros for a crisp, fresh flavor. Micro Intensity Mix™ pairs well with meats such as beef, poultry, lamb, pork, and fish, other seafood such as lobster, clams, and shrimp, nuts such as pine, pecans, and almonds, cheeses including goat, mozzarella, and parmesan, green beans, broccoli, carrots, arugula, potatoes, eggplant, tomatoes, tangerines, and avocado. The microgreens will generally keep 5 to 7 days when stored unwashed, in a sealed container, and in the refrigerator. It is recommended to use the greens immediately for the best quality and flavor.
Ethnic/Cultural Info
In the United States, Micro Intensity Mix™ is a popular garnish for sushi. The aromatic, robustly flavored, and colorful mix of herbs and greens compliments the flavors found within sushi without overpowering the central components. Sushi is a traditional dish that has been served in Japan for thousands of years. Historically, sushi was comprised of fermented fish paired with preserved rice, but over time, the dish has transformed into more modern variations, including the use of fresh raw fish and vegetables. Sushi arrived in the United States in 1966 in Los Angeles. The first sushi bar, Kawafuku, featured traditional sushi and primarily appealed to Japanese businessmen who introduced the cuisine to their American colleagues. In the 1970s, another sushi bar opened in Hollywood, attracting celebrities and widespread fame, inspiring sushi bars to open in other metropolitan areas, including Chicago and New York. In the modern-day, sushi in the United States has become a dish mixed with Eastern and Western influences. The evolving nature of sushi has also led to the creation of vegetarian and vegan rolls, with chefs using innovative ingredients such as microgreens to elevate the dining experience. Contemporary vegan sushi was created to help protect against unsustainable fishing practices, and vegan sushi provides exceptional flavors through ingredients, including sweet potatoes, bell peppers, cucumbers, mushrooms, avocado, red cabbage, jicama, squash, and radish. Chefs also focus on increased flavor and visual presentations, presenting vegan sushi in unexpected shapes such as sushi doughnuts and rolls brightly colored using natural coloring from dragon fruit, spirulina, or beets. Microgreens, especially Micro Intensity Mix™, provide depth to the rolls and added flavor without compromising the dish's integrity.
