Description/Taste
Petite® Watercress greens are small in size, averaging 10-12 centimeters in length and have wide, circular-shaped leaves with tender wispy stems. The bright green leaves are flat, thin, and pliable with many darker green veins branching across the surface. Petite® Watercress greens are crisp with a peppery flavor akin to horseradish, delivering a clean, sharp, spicy feel on the palate that soon dissipates leaving notes of citrus and fresh grass.

Petite® Watercress is an early harvest of the mature herb and is a part of a trademarked line of specialty greens grown by Fresh Origins Farm in San Diego, California. Designed to be slightly larger than microgreens, Petite® Watercress is harvested 4-6 weeks after sowing and is primarily used as an edible garnish to add a spicy, peppery flavor and to elevate flavor, texture, and visual appeal.

Petite® Watercress contains iron, potassium, calcium, folic acid, antioxidants, and vitamins A and C.
Applications
Petite® Watercress greens have a moderate peppery bite that is best suited for raw applications in savory dishes. The delicate leaves will wilt if exposed to prolonged heat, but they are stronger than microgreens and can withstand vinaigrette and oils. The peppery flavor of Petite® Watercress greens is ideal with meats such as duck, smoked fish, and sausages, or fruits that have a tart flavor like the sour cherry. They can also be floated on wonton or egg drop soup or placed in a sandwich for an extra peppery flavor. Petite® Watercress greens pair well with cheeses such as mozzarella, goat, parmesan, and feta, meats such as chicken, roast beef, salmon, and prosciutto, soups with a stock, yogurt, or cream base, balsamic vinegar, lemon, mint, cucumber, onion, potato, ginger, parsley, tomato, olives, garlic, beets, fennel, pears, and grapes. They will keep 7-10 days when stored unwashed, in a sealed container, and in the refrigerator.

Geography/History
Watercress is native to Europe and Asia and has been growing for over 3,000 years. It was then introduced to the United States in the 18th century and became commercially popular in the late 20th century. Petite® Watercress was created by Fresh Origins Farm in San Diego, California in the 1990s-2000s when the micro and petite greens trend exploded in popularity as a new a modern take on garnishes with robust flavors. Today Petite® Watercress can be found through select partners of Fresh Origins, such as Specialty Produce, and are available across the United States.
