Description/Taste
Like their red cousins, Black raspberries are an aggregate fruit of individual drupelets that are held together by very fine, nearly invisible hairs. They have a hollow center and the typical conical shape but are generally smaller than other colored raspberries. An occasional white bloom appears on the berries’ surface, but easily wipes away. Their deep purple almost black pigmentation is occasionally interspersed with a touch of red. They are often more tart than sweet, and have a slight note of earth in their flavoring. Once ripe, they have a highly perishable shelf-life.

Botanically classified as Rubus occidentalis, Black raspberries are occasionally referred to as Blackcaps by berry farmers. They are a primarily self-fruiting brambleberry and member of the family, Rosaceae along with strawberries and blackberries. They should not be confused with blackberries, as they are a much smaller berry with a delicate texture and slightly higher sugar content. Black raspberries are a superfood that have been shown to slow the growth of certain cancers.
Nutritional Value
Black raspberries are packed with powerful cancer fighting compounds. They contain three times the levels of antioxidants than that of blueberries. Specifically, anthocyanins, a natural phytochemical that fights free radicals and gives Black raspberries their rich, dark color. They also supply vitamins B and C, folic acid, copper, iron, and the phenolic compounds ellagic acid, gallic acid and rutin.
Applications
Black raspberries can be used interchangeably with red raspberries or blackberries. They are often far less sweet than other raspberry varieties and may require adjustments in certain recipes. They are most commonly used in ice creams and desserts such as cobblers and pies. Their high acidity makes them ideal for preserving and canning. Like other bramble berries, they may be cooked down into a syrup or gastrique and added to cocktails, vinaigrettes, marinades and savory sauces. Complimentary pairings include fresh creamy cheeses, bloomy rind cheeses, coconut, chocolate, stonefruits, honey, pork, lamb, quail, woodsy herbs and nuts.
Ethnic/Cultural Info
A natural dye made from Black raspberries was used by the USDA for many years. The food-safe dye was used to stamp on meat to designate the different grades of beef.
Geography/History
Black raspberries are indigenous only to North America, specifically coastal areas along the Atlantic and Pacific oceans. Depending upon the variety, they exist as trailing vines and upright growing bushes. Black raspberries are more abundant in the Eastern United States, especially in the southern Gulf states. They have found very limited commercial success, as they are usually found growing wild and have simply been crowded out by the popularity of the now ubiquitous red raspberry.
