Description/Taste
The Indian eggplant is a baby version of the larger eggplant, that has a characteristic oval egg-like shape and deep purple outer skin. The inner flesh is a creamy white color that contains very small inner seeds. With a crisp flesh, the Indian eggplant offers a mild eggplant flavor with light sweet notes.

Indian eggplant is available in the spring, typically later in the season.

Common purple eggplants are a Western type eggplant of the species, Solanum melongena and are known as part of the Giganteum Group. With thousands of varieties of eggplants in existence, there are incalculable variabilities throughout the species. Purple eggplants are the only type that are truly domesticated, absolutely displaced from their wild ancestors; they have never existed in the wild and due to human selection, construct and morphology, they should always be classified as separate from any wild progenitor
