Cayenne chile pepper strings are made up of cayenne pepper pods. The pods are thin-fleshed with a wrinkled, glossy exterior skin that turns from a green when immature to a vivid red when fully ripe. Each chile pod is about one inch wide and ten inches long. Their shape can be irregular but most often is slightly curved, elongated and tapered at its pointy tip. Offering serious heat, its flavor is slightly tart, acidic and smoky with a pungent, intense heat. So intense, in fact, it is recommended for fresh pepper use that the seeds and veins be removed. It's Scoville units range from 30,000-50,000.
