The term Costeño is used to refer to any variety of pepper grown along the East and West coasts of Mexico. A common variety used under this category is this smaller red pepper related to the Guajillo pepper. Costeño chiles measure 6-9 centimeters and feature a wrinkled appearance with a brittle texture, with a hard, woody stem that should be removed before used.
