Description/Taste
Easter Egg radish are petite and round with thin wiry taproots. Colors of their skin range from white to pink to crimson to purple, all in one bunch. Their flesh is bright white and crisp with a mild radish flavor. The Easter Egg radish produces green leaves that grow from the roots above ground, which are also edible.

The Easter Egg radish (Raphanus sativus), is a cruciferous root vegetable and a member of the Brassicaceae family along with turnips and horseradish. Not technically an actual botanical variety, Easter Egg radishes rather are a mix of pink, white, purple and red variety radishes.
Nutritional Value
Easter Egg radishes are a good source of Vitamins A, C, potassium, zinc and dietary fiber. Radishes also contain enzymes such as myrosinase, diastase, esterases, and amylase which have anti-fungal properties and are known to promote digestive health.
Applications
Easter Egg radishes look great as-is on a crudite plate, and their beautiful color palette makes for artistic tartines, just with bread, butter and salt. Chop and add to tacos and sandwiches for added crunch and zing. Roasting Eater Egg radishes will bring out their natural sweetness. Young radish greens are edible as well. Toss both radishes and their greens into stir-fries and salads for a nice burst of flavor. To store keep Easter Egg radishes refrigerated and use withing one week.
Ethnic/Cultural Info
Radishes have their own holiday in Oaxaca, Mexico. "La Noche de Los Rabanos" is a celebration of the radish held yearly on December 23rd.
Geography/History
Radishes have been enjoyed for thousands of years. Originating in China they eventually made their way to Greece and Egypt where they were used as a means of payment for workers building the ancient pyramids. A newer variety on the market, Easter Egg radish is grown from a combination of different colored radish seeds then upon full maturity bundled to make a multi colored bunch of radishes. A spring variety radish, Easter Egg radishes have a rapid germination cycle and mature fairly quickly.
