Ethnic/Cultural Info
Although carrots are most often used as a savory ingredient, the multi-colored root vegetables have also been used in sweets recipes since the Middle Ages, the most famous of which is Carrot Cake. The first iteration of carrot cake was recorded in Switzerland during the 10th century. During this time, sweeteners were expensive and difficult to obtain so people began to sweeten their desserts with what they had readily available and carrots, with their mildly sweet flavor, were a favored choice. The well-known carrot cake of the 20th century, which includes cream cheese frosting, nuts, and other dried fruits, gained popularity during World War II. Sugar was being rationed in the United States and Great Britain, so bakeries turned to carrots to sweeten their cakes. They also added pineapple juice, raisins, and other dried fruits to create recipes that were unique. Today, Carrot cake is commonly served during the Easter holiday in North America as a symbol of spring and rebirth.
Geography/History
Wild carrots are native to Western Asia in areas that are now Afghanistan, Turkey, and Iraq and were originally used as an aromatic herb. Yellow and purple carrots were first domesticated in Asia in the 10th century. Orange carrots were developed in the Netherlands in the 17th century. From there multi-colored carrot varieties spread through Europe and eventually to North and South America. Tiny Veggies™ Carrot Mix is a proprietary micro-vegetable grown by Fresh Origins Farms in San Marcos, California.
