Description/Taste
Micro Mint Lemon™ is a small, delicate green, averaging 1 to 2 centimeters in diameter, and is comprised of 1 or 2 tapered, pointed leaves attached to a slender stem. The bright green leaves are thin, smooth, broad, and flat with ruffled, scalloped edges. The leaves also bear prominent veins connected to a sturdy but flexible green stem, contributing to the green’s crisp, succulent, and tender consistency. Micro Mint Lemon™ has a refreshing balance of bright and cooling flavors with citrus, mint, herbal, and green accents. The leaves are also aromatic, and when slightly crushed, they will emit a fragrant, lemon-forward, minty aroma.
Seasons/Availability
Micro Mint Lemon™ is available year-round.
Current Facts
Micro Mint Lemon™ consists of young, edible seedlings that are a part of a trademarked line of specialty microgreens grown by Fresh Origins Farm in San Diego, California. The delicate, crisp greens are a modern twist on the popular lemon peel or mint leaf garnish and can be incorporated into culinary dishes and mixology. Micro Mint Lemon™ is grown by Fresh Origins Farm to provide chefs with a unique, edible garnish containing a tangy, herbal flavor. The greens are generally harvested 1 to 2 weeks after sowing, and chefs use the greens as an accent in savory and sweet dishes, especially seafood. Micro Mint Lemon™ can be sprinkled across preparations for substantial visual impact, or individual leaves can be strategically placed on a dish to evoke a more delicate, artistic nature. In addition to being featured as a microgreen, Micro Mint Lemon™ is also offered as Petite® Mint Lemon™, a slightly larger, more mature version of the microgreen.
Nutritional Value
Micro Mint Lemon™ provides some vitamin A to protect against vision loss, vitamin C to reduce inflammation, and contains lower amounts of folate, iron, and manganese. The greens also contribute smaller amounts of magnesium, potassium, and calcium. It is important to note that the vitamins and minerals are found primarily within the leaves and not in the stems of the microgreens. Growing conditions also significantly impact the nutritional content, and Fresh Origins cultivates their microgreens in a natural setting, an ideal climate for healthy, optimal greens.
Applications
Micro Mint Lemon™ is best suited as an edible garnish for both sweet and savory preparations, and the tender, crisp greens are showcased when consumed fresh, added at the end of applications to avoid wilting. The bright greens can be incorporated into salads, lightly crushed and mixed into fruit bowls, chopped into dips, or stirred into sauces. Micro Mint Lemon™ can also be floated on soups and curries, used as a garnish over seafood, paired with roasted meats, or combined into pasta. The subtly herbal, citrus-forward notes of Micro Mint Lemon™ complement a wide variety of dishes in Latin and Greek cuisine, and the greens are often used as a flavoring twist in tzatziki sauce and guacamole. Micro Mint Lemon™ can also be used as a substitute for common mint as a unique element in lemonade, sparkling water, and teas. In sweet preparations, Micro Mint Lemon™ is frequently used as a garnish over sorbets, cakes, and tarts, or is used to accent fruit jellies. Micro Mint Lemon™ pairs well with fruits such as apples, oranges, melons, and berries, goat cheese, yogurt, and seafood, including tuna, salmon, swordfish, halibut, clams, scallops, and shrimp. Micro Mint Lemon™ will generally keep 5 to 7 days stored in the refrigerator in a sealed container.
Ethnic/Cultural Info
Micro Mint Lemon™ is a bright, edible garnish popularly incorporated into craft cocktails. Mixology has considerably changed in 2020 with stay-at-home mandates due to the coronavirus pandemic. Restaurants have been required to only offer takeout, and mixology has pivoted to creating a new beverage experience at home. Specialty cocktail kits have been developed to include drink mixers, liquor, flavor enhancers, and unique garnishes, including microgreens, to easily combine, pour over ice, and enjoy at home. Mixologists are also hosting online cocktail hours to interact and connect with consumers on a personal level. Micro Mint Lemon™ combines two of the classic signature flavors used in cocktails, and the green’s fragrant and edible nature contributes a sensory element to beverages. Edible garnishes are also the first thing seen on the cocktail, and the aesthetics of the garnish establishes the feel of the drink, adding to the overall experience. Mixologists are also predicting a trend towards healthy, natural ingredients for cocktails in 2021, and microgreens such as Micro Mint Lemon™ are an herbaceous accompaniment, embodying the ideal of fresh, bright, and natural.
