Cubanelle Peppers, also known as Italian Frying Peppers are considered to be sweet peppers. They are a long, smooth pepper that is light yellow to a pale green in color. They are mild in flavor, and a good substitue for anaheim peppers.

Cubanelle peppers are available mid to late summer through early fall. Look for them at your local farmers market.
Applications
Cubanelle Peppers may be stuffed with cheese, meat, rice, or any other filling. They are great for frying as well.
