Description/Taste
Cylindra beets are named for their long, cylindrical roots that sometimes grow up to six or eight inches. These heirloom beets have a smooth dark maroon skin and a deep red flesh. Cylindra beets have a sweet flavor and a fine grain. The beet tops (or greens) are also sweeter than more common round beets. They are easy to peel and perfect for pickling.

Current Facts
Cylindra beet may also be referred to as Formanova or “Butter Slicer”. It is an heirloom variety of Beta vulgaris that originated in Denmark. Desired for their shape and size, Cylindra beets are tender and sweet and produce much more uniform slices than round beets.
