Description/Taste
Petite® Spinach Burgundy™ is small in size, averaging 10-12 centimeters in length, and has oval to obovate shaped leaves attached to slender, flexible stems. The bright magenta and burgundy leaves are smooth, velvety, and delicate. There are also light pink veins that branch across the underside of the leaf that connects into thin, fuchsia stems. Petite® Spinach Burgundy™ is crisp and tender with a subtle salty flavor and a fresh green taste.

Applications
Petite® Spinach Burgundy™ greens are best suited for raw applications as their tender and delicate nature cannot withstand prolonged periods of high heat. They are most commonly utilized as a garnish to enhance flavor and visual appeal of a dish and are tossed into fresh green or fruit salads, displayed over seafood such as scallops, sprinkled over soups, layered in sandwiches, and garnished over potato doughnuts or quiche. They can also be mixed into stir-fries, pasta, and vegetable side dishes. Petite® Spinach Burgundy™ pairs well with meats such as poultry, steak, lamb, and fish, shrimp, leeks, potatoes, spring garlic, dill, beets, raisins, feta cheese, walnut oil, lemon juice, and pine nuts. They will keep 7-10 days when stored unwashed, in a sealed container, and in the refrigerator.
