Description/Taste
Tiny Veggies™ Celery consists of clustered rosettes connected to a singular base and has elongated, straight to slightly curved stalks that measure approximately 10 to 12 centimeters in length. The stalks are thin, slender, and delicate with a round, cylindrical nature, appearing in shades of white, pale green, and yellow-green. The leaves connected to the stalks are bright green and generally consist of three flat, broad lobes with deeply serrated, toothed edges that appear in different sizes. The entire plant is edible including the stalks, leaves, and roots and offers a vibrant and crisp texture with a sweet, nutty, and vegetal flavor combined with peppery undertones.

Tiny Veggies™ Celery is part of a proprietary line of specialty micro-vegetables grown by Fresh Origins farm in northern San Diego, California. Tiny Veggies™ Celery is harvested when the greens have sprouted to between 9 and 12 centimeters, maintaining a supple and crisp texture and full-bodied flavor. Celery, botanically classified as Apium graveolens, is a member of the Apiaceae family and is closely related to parsley and carrots. Fresh Origins developed their Tiny Veggies™ as an accompaniment to their microgreens line. Currently the company grows over 20 different vegetables in their Tiny Veggies™ line with an emphasis on visually appealing and flavorful varieties. Tiny Veggies™ celery can be consumed fully, including the leaves and stems, and is best enjoyed raw. The vegetables are favored by chefs as an elevated crudité, garnish, or side dish.
Nutritional Value
Tiny Veggies™ Celery is a good source of vitamins A, C, and K, which are important for vision, immune function, skin and reproductive health, collagen production, antioxidant protection, cell growth, iron absorption, mood regulation, and inflammation and blood pressure reduction. This vegetable provides the body with potassium to regulate fluid balance, energy levels, and kidney and heart health. Folate, or vitamin B9, in Celery encourages cognitive function, tissue growth, reproductive health, and red blood cell formation. It contains calcium to boost bone health, nerve transmission, hormone secretion, and blood clotting.
Applications
Tiny Veggies™ Celery is fully edible and was designed to be enjoyed raw. Their small stature makes the tender stalks the perfect garnish for tray passed hors d’oeurves. The greens can be tossed into salads, floated atop pureed soups, sprinkled over grain dishes, or rolled into spring rolls. The crisp and refreshing greens makes a unique topping for lobster rolls or chicken salad sandwiches. Tiny Veggies™ Celery are the ideal addition to a crudité platter, with a mild sweet flavor that pairs well with a variety of dipping sauces. The tiny celery stalks can be placed upright in a Bloody Mary or glass of cold lemonade for a vegetal twist. The sprigs make a charming addition to seared fish, chicken, and lamb. Tiny Veggies™ Celery pairs with a variety of vegetables including leafy greens such as arugula, spinach, and endive, root vegetables like carrots, turnips, and beets, mushrooms, garlic, and brassicas including mustard greens, kale, kohlrabi, and broccoli. The leafy vegetable also pairs well with poultry, lamb, and steak, as well as potatoes, sweet potatoes, and sunchokes. Tiny Veggies™ Celery should be refrigerated for best quality and will keep up to 7 days when stored in an air-tight container.
Ethnic/Cultural Info
Celery has not always been relegated to the stock pot and vegetable tray. During the Victorian Era, early cultivars of the culinary staple were hard to grow and difficult to obtain. The crop had a short season in the winter and the plants needed to be sown in trenches and covered with soil to maintain their light yellow to white color, a method known as blanching. Because of this, only a few farmers grew the leafy green. The scarcity of the vegetable made it irresistible to the Victorian upper-class England and the wealthy upper echelons in the Gilded Age of America. The upright leafy plant held a prominent place on the table where it was showcased in an ornate vase known as a celery glass. The demand for the vegetable from the bourgeoisie led to a bit of a celery race, with breeders vying to develop larger, prettier, and more flavorful varieties. Long distant railways and refrigerated rail cars allowed celery to spread across the United States. This moved the vegetable off the elaborate tables of wealthy dinner parties to restaurants and middle-class homes. This change, combined with easier to grow varietals, led to the green becoming more mainstream and common place. Overtime, as celery lost favor as a show piece, it became relegated to party platters and mirepoix. Geography/History
Celery is descended from a wild vegetable native to the Mediterranean called Smallage. The bitter-tasting marsh plant was primarily used medicinally and was spread across Europe and Asia by merchants and travelers. The plant was grown throughout Europe for purely medicinal purposes until the early 17th century when it was first introduced as a culinary ingredient. From there the ancient plant was cross-bred many times to develop modern-day celery. Tiny Veggies™ Celery is a proprietary micro-form of a modern celery cultivar grown by Fresh Origins Farm in San Marcos, California. Fresh Origins uses the mild, Southern California climate to grow their Tiny Veggies™ year-round.
