Description/Taste
Micro Radish Mix™ consists of small, delicate greens, averaging 1 to 2 centimeters in diameter, and is comprised of 1 or 2 flat, heart-shaped leaves attached to a slender stem. The green to dark purple leaves are thin, smooth, and broad with curved, even edges. The leaves also bear faint veins connected to a sturdy but flexible green stem, contributing to the crisp, succulent, and tender consistency of the microgreen. Micro Radish Mix™ has a peppery, earthy, and vegetal flavor with subtly spicy, grassy notes.
Seasons/Availability
Micro Radish Mix™ is available year-round.
Current Facts
Micro Radish Mix™ is a blend of young, edible seedlings that are a part of a trademarked line of specialty microgreens grown by Fresh Origins Farm in San Diego, California. Fresh Origins has developed over thirty microgreen mixes for culinary use, and Micro Radish Mix™ is a specialty curated mix of multiple radish varieties to provide chefs an edible garnish with a peppery, vegetal, and fresh flavor profile. Micro Radish Mix™ also adds visual depth with its multi-colored, expressive appearance and can be individually placed on small plates or sprinkled across larger preparations for greater impact. Microgreens are generally harvested 1 to 2 weeks after sowing, and chefs use the herbs to build complexity, texture, and flavor within dishes.
Nutritional Value
Micro Radish Mix™ is a source of potassium to balance fluid levels in the body, calcium to strengthen bones, fiber to regulate the digestive tract, and vitamins A and C, antioxidants that reduce inflammation and boost the immune system. The greens also contain some magnesium, vitamins E and K, phosphorus, and iron. It is important to note that the vitamins and minerals are found primarily within the leaves and not in the stems of the microgreens. Growing conditions also significantly impact the nutritional content, and Fresh Origins cultivates their microgreens in a natural setting, an ideal climate for healthy, optimal greens.
Applications
Micro Radish Mix™ is best suited as an edible garnish. The tender, crisp greens are showcased when consumed fresh, and the leaves should be added at the end of preparations to avoid wilting. Micro Radish Mix™ can be tossed into green salads, layered into sandwiches for added flavor, topped on avocado toast, or floated on soups, stews, and curries. The greens can also be sprinkled over rice and noodle-based dishes, piled as a bed of greens for meats, tossed into stir-fries or used as a garnish over sushi and nigiri. Micro Radish Mix™ complements flavors commonly found in Japanese, Chinese, Indian, and Korean cuisine, but the subtly spicy notes can extend beyond Asian applications into Latin and Hispanic cuisine, French cuisine, American cuisine, and fusion dishes. Micro Radish Mix™ pairs well with root vegetables such as potatoes, parsnips, carrots, and turnips, aromatics such as ginger, garlic, scallions, and onions, feta, lemon juice, seafood, poultry, tofu, mushrooms, cauliflower, and asparagus. Micro Radish Mix™ will generally keep 5 to 7 days stored in the refrigerator in a sealed container.
Ethnic/Cultural Info
Indian cuisine is often created with the Ayurvedic tradition of incorporating six tastes, or rasas, into culinary dishes. These six elements, astringent, pungent, sweet, sour, salty, and bitter, are believed to balance the health of the body, and depending on the individual’s needs, one element may be stronger than the others in a meal to counteract imbalances. Radish greens are an everyday ingredient found within Indian cuisine and are defined as having a pungent taste, commonly used to invigorate the senses, warm the body, enhance flavor, and increase cognitive awareness. Traditionally, the greens are cooked into dishes, but with present-day culinary innovation, chefs can utilize Micro Radish Mix™ as a creative, modern twist on classic radish flavorings without the need for cooking. Micro Radish Mix™ can be used as a fresh, edible garnish to enhance the dish's pungency without overpowering the other tastes. The greens also elevate traditional culinary practices and allow chefs to introduce familiar flavors in an unexpected way. Micro Radish Mix™ can be sprinkled over curries, dals, stir-fries, and a wide array of other Indian dishes for added texture, flavor, and aroma.
