Cauliflower, botanical name Brassica oleracea var. botytis, belonging to the plant order Capparales, is a cool season biennial. Sprouting cauliflower develop from buds located in the bases of the older leaves, and share similar characteristics to mature cauliflower but on a smaller scale. Sprouting cauliflower is an underutilized culinary ingredient because it is rarely left to develop.
