|Food Buzz: History of Heirloom Tomatoes||Listen|
Rosso Bruno tomatoes are roughly the size of a golf ball and are perfectly round in shape. They offer a robust old-fashioned tomato flavor, and can be used at multiple stages of ripeness. At its first sign of ripeness the Rosso Bruno tomato is firm, sweet and tart, and it has its signature red-brown coloring with green shoulders. As it ripens the green fades, the flesh becomes tender-firm, juicier and more flavorful. At its peak maturity, the Rosso Bruno is deep brown in color and soft to the touch with a low-acid, exceptionally rich and sweet flavor. The indeterminate tomato plant produces the fruit along sprawling vines.
Rosso Brunno tomatoes are available year-round.
Tomatoes, previously termed Solanum lycopersicum, are botanically referred to as Lycopersicon esculentum, and are a member of the nightshade family. The Rosso Bruno tomato is an heirloom hybrid variety that is unique as it is grown specifically as a flavorful fresh eating winter tomato. Most winter tomatoes, or off-season tomatoes, are instead bred for shipping capabilities. Rosso Bruno tomatoes are hand picked, vine-ripened, and available year-round.
Tomatoes contain a considerable amount of calcium and Vitamin K, both of which are essential in strengthening and performing minor repairs on the bones and bone tissue. Rosso Bruno tomatoes are also rich in potassium, magnesium, vitamin A and vitamin C.
The Rosso Bruno is a preferred fresh-eating tomato for use in salads and sandwiches, though it can also lend itself to roasting, or making sauces and soups. Rosso Bruno tomatoes can easily replace common red tomatoes for a pizza or a salsa base. Tomatoes pair well with soft, young cheeses, such as chevre and burrata, as well as aged cheeses like pecorino and parmesan. They can also be paired with citrus, melons, herbs such as basil, cilantro and rosemary, eggplant, mushrooms, mild and hot chilies, poultry, pork, seafood, vinaigrettes, aged balsamic vinegar, and cream based-sauces like béchamel. Rosso Bruno tomatoes are known to have a great shelf life, as they can often be stored at room temperature for up to two weeks. Only refrigerate cut tomatoes, or extra ripe tomatoes to slow the process of decay.
Dulcinea Farms takes an innovative approach to growing the Rosso Bruno tomato by ensuring year-round produce through cultivation in several locations: San Joaquin Valley, California, Yuma, Arizona, and various regions of Central America.
Dulcinea Farms first produced the Rosso Bruno tomato, though it is thought to be essentially the same variety as the trademark Kumato™ tomato, just marketed under a different name for the Canadian and American markets. All tomatoes can trace their heritage to coastal South America plains of Chile, Ecuador and Peru, where wild tomatoes were first discovered. Rosso Bruno tomatoes thrive in the same growing conditions as their ancestors, preferring dry, arid climates, though they are often grown in controlled-climate greenhouses.
